  1. Add almond milk to saucepan.
  2. Bring to boil then reduce to simmer.
  3. Add 50 g milk chocolate and 25 g dark chocolate.
  4. Stir to melt and mix.
  5. Add dash of Nutmeg, Cinnamon, and Cayenne.
  6. Remove from heat and pour into mugs.

Yes, there's something special about the "hot water chocolate" you'll get at a ski lodge. The way you know you should let it cool down because it's going to burn your mouth but you drink it anyway. It's good because of where you are when you get it. But it's not the best hot chocolate.

For the best hot chocolate you need to melt your own chocolate and add a few spices. And while hot chocolate mix is always the same, when you do it this way, you can experiment with different chocolate flavors and ratios to make it all your own.

The trick to measuring out enough almond milk is to first pour it into the mugs you're going to use and then pour it into the sauce pan. This way you'll have the perfect amount.

PS. You truly only need a dash of the spices. More will not make it better.
